Dr. Dipali Saxena is an accomplished academic, researcher, and project director with specialization in food technology, nutrition, functional foods, food safety, and sustainable food systems. She is currently serving as an Assistant Professor in the Department of Foods and Nutrition at Shri Vaishnav Institute of Home Science, Shri Vaishnav Vidyapeeth Vishwavidyalaya (SVVV), Indore, a position she has held since October 2020.
She holds a PhD in Food Technology from Jiwaji University and is a Gold Medalist at the postgraduate level in Food Technology. Dr. Saxena has extensive experience in teaching, academic coordination, curriculum development under NEP 2020, vocational skill development, and doctoral supervision. Her research interests span gluten- and casein-free product development, functional foods and nutraceuticals, food safety management, energy-efficient food processing, sustainable preservation, and agri-entrepreneurship.
Dr. Saxena has authored more than 45 research and review papers published in UGC CARE–listed, peer-reviewed, and Scopus-indexed journals, along with multiple book chapters with international publishers such as Springer, CRC Press, IGI Global, Taylor & Francis, and MDPI. She has served as a keynote speaker, resource person, reviewer, editorial board member, and professional trainer, and has organized numerous national and international conferences, webinars, and faculty development programs.
Her professional experience also includes roles as a Food Technologist on a DST-sponsored project, Lecturer in Food Technology, Quality Control Officer in the food industry, and research trainee in national agricultural and food processing institutes.
